Observed 6 unlabeled sauce bottles in small prep top cooler in front food service area. All items were outside their original containers. CA: Food items stored outside their original containers shall be clearly and legibly identified, in English, with the common name of the food.
Nonfood-contact surfaces clean — Inspector Note: Observed food debris on the outside surface and inside of large prep top cooler in front food service area. CA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
Insects, rodents, and animals not present — Inspector Note: Observed spider in bowl of flour in front food service area. CA: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by routinely inspecting food and supplies, and routinely inspecting the premises for evidence of pests. COS: Flour was discarded and bowl/cover was placed for warewashing.

Observed grilled chicken, sliced sausage, and ham cold holding above 41F in main kitchen reach in cooler. CA: All TCS foods shall be maintained at 41F or below when cold holding. COS: Items were discarded.
