Food separated and protected — Inspector Note: Observed raw chicken stored above cooked soup, salmon and sausage in the reach-in freezer in the main kitchen. Observed raw shrimp stored directly on top of crema sauce, red and green salsa (ready to eat sauce) in the bottom of the prep top cooler in the main kitchen. C/A: Food shall be stored in order of cook temperature in order to prevent cross contamination.
