C/A- Cloths in-use for wiping counters and other equipment surfaces shall be:(i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n) COS- all wiping cloths placed in sanitizer bucket

Single-use/single-service articles: properly stored, used — Inspector Note: Observed black to go containers lip up next to fryer. Observed small and large to go boxes on prep top counter lip up. C/A- 1. Single-service and single-use articles and cleaned and sanitized utensils shall be handled, displayed, and dispensed so that contamination of food-and lip-contact surfaces is prevented. COS- All single use article stored lip down.

Food stored covered — Inspector Note: Observed egg rolls and two containers of raw chicken in RIC uncovered. Observed won ton noodles in RIF uncovered. Observed several sauces in prep bottom uncovered. Observed diced carrots, sauce, and cabbage shredded stored uncovered in WIC. C/A- storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination COS- All food stored covered with lids or plastic
