Utensils, equipment and linens: properly stored, dried, handled — Inspector Note: Observed multiple metal pans wet stacked on rack by walk-in cooler in main kitchen. CA: After cleaning and sanitizing, equipment and utensils shall be air-dried.

Proper cooling time and temperature — Inspector Note: Observed sliced tomatoes in bottom of prep top cooler and walk-in that were tightly wrapped and prepared at 8:40 AM (3 hours ago). Items would not cool rapidly enough to reach 41F within the next hour. CA: TCS foods prepared from ambient temperature shall be cooled to 41F within 4 hours. COS: Wrapping was loosened and items were moved to walk-in freezer for rapid cooling.
