Adequate ventilation and lighting; designated areas used — Inspector Note: Observed employee hat hanging on the rack, jacket thrown across the table, and a bag of shirts stored on top of a pail of buttercream along the table in the main kitchen. CA: 1. Dressing rooms shall be used by employees if the employees regularly change their clothes in the establishment. 2. Lockers or other suitable facilities shall be used for the orderly storage of employee clothing and other possessions. COS: Items removed from the table.

Adequate handwashing facilities supplied & accessible — Inspector Note: No hand drying provision provided at the hand sink in the front food service. CA: Each handwashing sink or group of adjacent handwashing sinks shall be provided with: 1. Individual, disposable towels; 2. A continuous towel system that supplies the user with a clean towel; 3. A heated-air hand drying device; or 4. A hand drying device that employs an air-knife system that delivers high velocity, pressurized air at ambient temperatures. COS: Paper towels provided.

Food stored covered — Inspector Note: Observed several boxes containing toppings (kisses, cookie crumbles, etc) in the walkin freezer of the main kitchen with the bags open and uncovered; 5 cakes in the reachin cooler of the front food service uncovered. CA: Food must be stored covered to prevent the possibility of contamination. COS: Foods covered.
