Wiping cloths: properly used and stored — Inspector Note: Observed wiping clothes stored in a sanitizing solution of 0 ppm QAC. C/A: Cloths in-use for wiping counters and other equipment surfaces shall be: Held between uses in chemical sanitizer solution of 200 - 400 ppm QAC or 50 - 100 ppm chlorine. COS: Buckets remade to a solution of 200 pm QAC.

Food stored covered — Inspector Note: Observed containers of dressings (Dijon and balsamic vinaigrette) and salad toppings (walnuts, cranberries, and raisins) stored uncovered in the main kitchen.
