Food stored covered — Inspector Note: Observed tortilla straws stored uncovered on countertop in main kitchen, raw turkey burgers/raw chicken breast/raw spicy chicken breast stored uncovered in reach-in cooler by grill in main kitchen, and all items (4 sauces, 2 chicken containers, 2 brisket containers, queso, and 2 bacon containers) stored uncovered in the steam table in main kitchen. CA: Unless in the cooling process, food must be stored covered to protect from and prevent overhead contamination. COS: all items were covered.

Observed eggrolls and chicken wings in the top of the prep top cooler by the fryer in the main kitchen cold holding above 41F. CA: When cold holding, TCS foods shall be maintained at 41F or below. CA: All items had been placed on the line at 9:30 AM and facility was allowed to cool items. All items were place in the walk-in cooler for rapid cooling.

Food properly labeled; original container — Inspector Note: A dented can of fire roasted jalapeno salsa was stored on the storage rack inside the kitchen. CA Dented cans must be separated from food items served to the pubic or placed in the damaged goods section of the rack. COS The can was removed.
