C/A: Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food.

Contamination prevented during food preparation, storage, display — Inspector Note: Observed multiple containers of food stored directly on floor of walk in cooler and walk in freezer. C/A: Food products must be stored At least 6 inches above the floor.

In-use utensils: properly stored — Inspector Note: Observed scoop for rice stored in ice water beside rice cooker. C/A: Utensils stored in water must be stored in in running water of sufficient velocity to flush particulates to the drain, or water at 135f or hotter. COS: PIC removed utensil from ice water and placed in 3 comp sink to wash, rinse and sanitize.
