Adequate ventilation and lighting; designated areas used — Inspector Note: Observed two sport drink bottles on the countertop of prep area in the main kitchen. CA Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination.

Proper date marking and disposition — Inspector Note: Observed a container of shredded cheese marked prepped on 4/20 and not discarded passed 7 days. Observed sliced cheese in prep top cooler (bottom) marked prepped on 4/20 and not discarded passed 7 days. CA: A food that requires datemarking shall be discarded if it is appropriately marked with a date or day that exceeds 7 days. COS: employee discarded food.

Food properly labeled; original container — Inspector Note: Observed squirt bottles in main kitchen and front food service without labels indicating contents. Observed storage containers of powder sugar and sugar without a label in the dry storage area. C/A: 2. Label information shall include: (i) The common name of the food, or if there is no common name, an adequately descriptive identity statement; COS: Storage containers labeled 'powdered sugar' and 'sugar. Squirt bottles labeled 'hot sauce', and 'barbecue sauce'.

Proper cold holding temperatures — Inspector Note: Observed sour cream, white American cheese, and yellow American cheese in walk in cooler of main kitchen holding above 41F. Observed ranch and blue cheese dressings in prep top cooler of main kitchen holding above 41F. C/A: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below COS: PIC discarded sour cream, white American cheese, yellow American cheese, ranch and blue cheese dressing.
