C/A: Concentration of the sanitizing solution shall be accurately determined by using a test kit or other device. Correct within 10 calendar days

Hands clean and properly washed — Inspector Note: Observed an employee turn off the handwashing sink faucet with bare hands after washing their hands, then handle pizza ingredients in the main kitchen. EHS informed the employee of the violation; however, the employee repeated the same practice at least 3 additional times during the inspection. C/A: To avoid recontaminating their hands or surrogate prosthetic devices, food employees may use disposable paper towels or similar clean barriers when touching surfaces such as manually operated faucet handles on a handwashing sink or the handle of a restroom door. COS: Employee re-washed their hands and turned of faucet with paper towel.
