CA: Wiping cloths held between uses in a chemical sanitizer solution at a concentration of 200-400ppm QAC. COS: Both sanitizer buckets were remade to 400ppm QAC.
Food stored covered — Inspector Note: Observed bacon jam, chili salsa, flour, and cooked peppers in oil stored uncovered on countertop in main kitchen. CA: Unless in the cooling process, all food must be stored covered to protect from possible contamination. COS: All items were covered.
