Observed a metal container with powder sugar without a label on it. Observed a large bin with seasoning without any label on it. C/A Food Storage Containers, Identified with Common Name of Food. Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food. COS: Owner labeled the containers
Wiping cloths: properly used and stored — Inspector Note: Observed wiping cloths with food residue that were wet resting on the food table next to the steam well. C/A Cloths in-use for wiping counters and other equipment surfaces shall be: (i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and (ii) Laundered daily. COS: Cloths were placed in sanitizer
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed the owner getting a thermometer and without sanitizing he placed in a box of fries to check for the receiving temperature. C/A Thermometer must be sanitized before use and in between use COS Thermometer sanitized with alcohol wipes
Proper date marking and disposition — Inspector Note: Observed facility receives baklava cheesecake from the corporate office but there is no discard date place on the cheesecake offered for sale at the RIC for the customers. Observed a bag of garlic dip in the RIC that was open without a date when was open. The bag stated they can only keep the garlic for 7 days. C/A Marking the date or day the original container is opened in a food service establishment, with a procedure to discard the food on or before the last date or day by which the food must be consumed on the premises, sold, or discarded; or (iv) Using calendar dates, days of the week, color-coded marks, or other effective marking methods, provided that the marking system is disclosed to the Health Authority upon request. Toxic substances properly identified, stored, used — Inspector Note: Observed one spray bottle hanging on the wall near the mop sink containing a yellow liquid that was unidentified. Observed another spray bottle at the front service area that contained a pink liquid that was unidentified. C/A Original Containers, Identifying Information. Toxic substances properly identified, stored, used — Inspector Note: Observed the sanitizer at the sink in the main kitchen area with a concentration way above 400ppm. The water in the sink was pink. Observed the manager having a sanitizer bottle where the liquid was pink, he was QUAT using full strength to sanitize the tables C/A -6-1.07(6)(g) - Chemical Sanitizers, Criteria (P) (g) Chemical Sanitizers, Criteria. Chemical sanitizers, including chemical sanitizing solutions generated on-site, and other chemical antimicrobials applied to food-contact surfaces shall: 1. Meet requirements specified in 40 CFR 180.940 Tolerance exemptions for active and inert ingredients for use in antimicrobial formulations (Food-contact surface sanitizing solutions) P, or 2. Meet the requirements as specified in 40 CFR 180.2020 Pesticide Chemicals Not Requiring a Tolerance or Exemption from Tolerance-Non-food determinations.
