Food stored covered — Inspector Note: Observed all foods uncovered at the prep unit (lettuce, cheese slices, tomatoes, sauces, etc) except the cheese sauce and bacon in the main kitchen; ice in the bin at the drive thru uncovered. CA: Store food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. COS: All items covered
Proper cold holding temperatures — Inspector Note: Observed sliced cheese at the prep top station holding above 41F and chocolate frosty mix in the drive thru ice cream machine holding above 41F all in the main kitchen. CA: TCS cold held foods must be maintained at 41F or below. COS: All foods discarded.
Proper hot holding temperatures — Inspector Note: Observed spicy and regular chicken nuggets stored at temperatures below 135F in the main kitchen at the fry station. CA: TCS hot hold foods must be maintained at 135F or higher COS: Foods Discarded
Utensils, equipment and linens: properly stored, dried, handled — Inspector Note: Observed numerous containers stacked wet on the rack in the dishwashing area. CA: Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils: 1. Shall be air-dried or used after adequate draining before contact with food; and 2. May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry. COS: Dishes rewashed
