Proper cold holding temperatures — Inspector Note: Observed several salads and a chicken wrap in the reach-in cooler located in the dining prep side of the main kitchen cold holding at 43F and 44F. Observed liquid egg whites cold holding at 45F in the cold drawer unit in the egg prep station located in the main kitchen. C/A: cold time/temperature control for safety food shall be maintained at 41°F or below COS: items discarded; chicken wrap allowed to cool to 41F.
