Nonfood-contact surfaces clean — Inspector Note: Observed mold-like build up on the interior basin on the hand sink located next to the bulk ice machine in the main kitchen area. C/A: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

Plumbing installed; proper backflow devices — Inspector Note: Observed a leak in the pre-rinse sprayer of the 3-compartment sink; leak is creating excess water on the floor of the ware washing area of the main kitchen. C/A: A plumbing system shall be repaired according to law; P and maintained in good repair.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed black build up on the interior roof (dispensing portion) of the bulk ice machine located in the ware washing area of the main kitchen. C/A: In equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment: (I) At a frequency specified by the manufacturer; or (II) Absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold.
