Warewashing facilities: installed, maintained, used; test strips — Inspector Note: Observed dishwasher at downstairs bar and bar near arcade games on 3rd floor with chlorine sanitizer at 0ppm. C/A: A warewashing machine that is installed after September 12, 2007 shall be designed and equipped to: automatically dispense detergents and sanitizers Pf and incorporate a visual means to verify that detergents and sanitizers are delivered or a visual or audible alarm to signal if the detergents and sanitizers are not delivered to the respective washing and sanitizing cycles. COS: PIC primed dish machine sanitizer dispensers, both machines tested at 100ppm.

Observed squeeze bottle of garlic oil without date marking label in prep top cooler 2 in main kitchen. C/A: TCS food items shall be properly date marked to ensure a 7 day shelf life. COS: Cooked chicken was discarded due to cold-holding violation. Garlic oil was marked with date label.
