C/A: Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. COS: Employee removed watch.

Item 1-2A Critical / Risk Factor

PIC present, demonstrates knowledge, performs duties — Inspector Note: Facility receives key drop delivery from McLane. PIC unable to provide records of receiving temperatures of TCS foods received from vendor. C/A: Employees are visibly observing and verifying delivered foods as they are received to determine that they are from approved sources and are placed into appropriate storage locations, as required by this Chapter, such that they are received and maintained at the required temperatures, protected from contamination, unadulterated, and accurately presented, by routinely monitoring the employees’ observations, maintaining receiving/corrective action records for deliveries during non-operating hours, and periodically evaluating foods upon their receipt as specified within DPH Rule 511-6-1-.04(3)(m). The food service establishment shall maintain records of the written agreement as specified in subsection (3)(m)3. of this Rule as well as records that show the delivery condition and temperature of the products upon receipt of delivery. Records shall be made available upon request by the Health Authority *EHS discussed key drop requirements with PIC. PIC will inform McLane of key drop responsibilities and email next delivery temperature records to EHS by 3/8/2026.
