CA: Prepackaged sandwiches, eggs, infant formula, shucked oysters, milk, and time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date. COS: The food items were discarded.
Food properly labeled; original container — Inspector Note: Squeeze bottles of sauces stored inside the prep unit, several seasoning and tea powder containers observed inside the kitchen and front prep line was observed not labeled. CA: Food packaged in a food service establishment, that is not provided by a foodservice employee upon consumer request, shall be labeled. Label information shall include: The common name of the food, or if there is no common name, an adequately descriptive identity statement.
Warewashing facilities: installed, maintained, used; test strips — Inspector Note: Test strips were not available. CA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided.
Adequate ventilation and lighting; designated areas used — Inspector Note: Observed burn gel, alcohol, neosporin ointment, dry fruit, wasabi and grape fruit stored inside the prep unit in the kitchen. CA: Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. COS: Personal items were removed.
Proper date marking and disposition — Inspector Note: A container of mayo sauce stored inside the walk in cooler was date marked with an expiration date of 4/16/26. A food that requires datemarking shall be discarded if it exceeds 7 days, not including the time that the product is frozen. COS: The product was discarded.
