CA: Equipment and utensils shall be designed and constructed to be durable and to retain their characteristic qualities under normal use conditions.

Food separated and protected — Inspector Note: Observed raw shrimp stored next to the onions and broccoli inside the prep unit. Raw shell eggs were stored on the top shelf next to the broccoli, noodles were stored next to the raw chicken, cabbage was stored on top of the raw chicken inside the reach in cooler. CA: Raw ready-to-eat food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw ready-to-eat food such as fruits and vegetables shall be separated and protected from cross contamination. COS: The food items were rearranged to prevent cross contamination.
