In-use utensils: properly stored — Inspector Note: Observed scoops with handles touching the food product stored in pork seasoning, chicken seasoning, and sugar in main kitchen. CA: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in the food with their handles above the top of the food. COS: Scoop handles were moved above the food products.

Single-use/single-service articles: properly stored, used — Inspector Note: Observed to go containers stored under the steam table in front food service with the pipe from the steam table dripping onto the to-go containers. CA: Single-service and single-use articles and cleaned and sanitized utensils shall be handled, displayed, and dispensed so that contamination of food-and lip-contact surfaces is prevented. COS: Items were discarded.

Proper date marking and disposition — Inspector Note: Observed 3 packages of ham in the walk-in cooler in main kitchen held after their date marking. Two packages were date marked 6/2-6/9 and one package was date marked 6/8-6/15. CA: A food that requires datemarking shall be discarded if it exceeds 7 days, not including the time that the product is frozen. COS: All three packages were discarded.
