Insects, rodents, and animals not present — Inspector Note: Observed exit door in main kitchen left open allowing potential entry of pests. C/A: Outer openings of a food service establishment shall be protected against the entry of insects and rodents by: (i) Filling or closing holes and other gaps along floors, walls, and ceilings; (ii) Closed, tight-fitting windows; and (iii) Solid, self-closing, tight-fitting doors. COS: Door closed.

C/A: Each handwashing sink or group of adjacent handwashing sinks shall be provided with: 1. Individual, disposable towels; 2. A continuous towel system that supplies the user with a clean towel; 3. A heated-air hand drying device; or 4. A hand drying device that employs an air-knife system that delivers high velocity, pressurized air at ambient temperatures COS: Paper towels provided.

Proper cold holding temperatures — Inspector Note: Observed several TCS food cold holding at above 41F in RIC in main kitchen (*see asterisks in temperature section). C/A: All TCS foods cold held must be maintained at 41F and below. COS: PIC advised food temperatures increased due to door being opened over past hour. All food placed in ice bath or moved to RIF for rapid cooling (see temperature section for corrective actions).
