Contamination prevented during food preparation, storage, display — Inspector Note: Observed 3 boxes of romaine lettuce stored on floor inside of walk in cooler at Main Kitchen. C/A: Food shall be protected from contamination by storing the food: (i) In a clean, dry location; (ii) Where it is not exposed to splash, dust, or other contamination; and (iii) At least 6 inches (15 cm) above the floor.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed in use dish machine chlorine concentration at 0 ppm. Dishes being washed. C/A: Chlorine concentration shall be 50-100 ppm to prevent contamination. COS: Three compartment sink set up. Quat concentration at 300 ppm. Dishes removed from dish machine and resanitized.
