C/A: Repair unit; Ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use. COS: All TCS foods removed and discarded from unit. Facility must service unit to cold hold at 41F and below prior to storing TCS foods.
Proper cold holding temperatures — Inspector Note: Observed several TCS foods cold holding above 41F (*see asterisk*) in both lower prep coolers in main kitchen. CA: All TCS items shall be maintained at 41F and below during cold holding. COS: All items were discarded.
Compliance with variance, specialized process and HACCP plan — Inspector Note: Observed in-house juiced fruit (lemons, limes, grapefruit, blueberries) stored in heat sealed bags in the freezer in downstairs bar storage area. Per PIC, fruit are juiced, sealed, and held in establishment for 3 days. CA: A food service establishment shall obtain a variance from the Health Authority as specified in DPH Rule 511-6-1-.10(5)(a) and (5)(b) before preparing food by another method that is determined by the Health Authority to require a variance. Facility shall discontinue use of process and submit procedures for review by health authority by July 24, 2026.
Food separated and protected — Inspector Note: Observed raw shelled eggs stored behind sliced cheese, raw sausage stored behind peppers, raw chicken stored behind shrimp, and raw beef stored behind salmon in grill cooler in main kitchen. CA: Raw animal proteins will be stored based on minimum cook temperatures to prevent cross contamination. COS: Eggs were moved in front of cheese, sausage was moved in front of peppers, chicken was moved in front of shrimp, and beef was moved in front of salmon.
