CA Food and beverages must be stored 6 inches off the floor to prevent contamination.
Wiping cloths: properly used and stored — Inspector Note: Damp wiping cloths were stored directly on the countertops inside the front prep line and inside the kitchen. CA Wiping cloths must be stored inside the sanitizer bucket when not in use to prevent contamination.
Nonfood-contact surfaces clean — Inspector Note: Food debris and grease accumulation was observed on the countertops (front prep area & kitchen), on the side and wall panel of the fryers, inside reach in coolers (front prep area & kitchen) and on the backsplash behind the fryers. CA Equipment and nonfood contact surfaces must be cleaned and sanitized.
Food-contact surfaces: cleaned & sanitized — Inspector Note: The sanitizer at the 3-compartment sink tested at 0PPM. CA The concentration of the sanitizer must test at 200PPM for QAC or 50PPM for chlorine. COS The dishwasher is used to wash, rinse and sanitize the dishes.
