Wiping cloths: properly used and stored — Inspector Note: Observed wiping cloths on front counter held in sanitizer solution at 150ppm. CA: Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration of 200-400ppm for Quaternary Ammonia and 50-100ppm for Chlorine. COS: Manager changed out buckets. Buckets tested at 200ppm.
