1 recorded inspectionFood and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed in-use True 2-door glass cooler in main kitchen cold holding at above 41F in main kitchen. C/A: Repair cooler; Ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use. COS: All TCS food temperatures were in compliance and moved to units cold holding at 41F and below.
Warewashing facilities: installed, maintained, used; test strips — Inspector Note: Observed no irreversible registering temperature indicator or device to verify high temperature dishmachine utensil surface temperature within facility. C/A: In hot water mechanical warewashing operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the utensil surface temperature.
Insects, rodents, and animals not present — Inspector Note: 1. Observed live German cockroaches along floor under front food service serving line of Asian Cafe and Thrill of the Grill. 2. Observed several dead German cockroaches along floor throughout Asian Cafe front food service area and kitchen prep area. C/A: Deep clean areas and conduct pest control application; the presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by: 1. Routinely inspecting incoming shipments of food and supplies; 2. Routinely inspecting the premises for evidence of pests; 3. Using methods, if pests are found, such as trapping devices or other means of pest control as specified under subsections (6)(e), (6)(m), and (6)(n) of this Rule; Pf and 4. Eliminating harborage conditions. *Facility currently has active pest contract with Terminix with last fogging conducted 8/12/2026. Facility must conduct additional pest application, deep clean facility, and monitor to ensure applications are effective. Email EHS pest control invoice of next pest application.*
Food stored covered — Inspector Note: Observed several food items not in-use stored uncovered along prep tables in Asian front food service area (4 containers of leafy green mixes, food inside top compartment of asian prep top cooler, croutons, and food along steamtables), in Italian front food service area (deli meat, cheese, etc. in ice bath), in Deli front food service area (bread, soups, cold tables, etc.) and along salad buffet lines in serving area/cafe. C/A: Unless cooling, all food must be stored covered. COS: Food covered in all areas and food removed from buffet at 1:30pm. *Buffet tables and serving line glass coverings do not fully cover foods on serving lines and salad buffet line during holding.
Food-contact surfaces: cleaned & sanitized — Inspector Note: 1. Observed black debris along wall inside ice machine in Asian kitchen prep area. 2. Observed can opener blade heavily soiled with black debris and food accumulations at prep table in main kitchen. C/A: Equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: Ice discarded; all equipment cleaned and sanitized.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed in-use dish machine dispensing chlorine at 10ppm in Asian prep kitchen. C/A: A chemical sanitizer used in a sanitizing solution for a manual or mechanical operation at contact times specified under subsection (8)(b)3 of this Rule shall meet the requirements specified in DPH Rule 511-6-1-.07(6)(g), shall be used in accordance with the Environmental Protection Agency (EPA)-registered label use instructions P, and shall be used as follows: 1. A chlorine solution shall be maintained within 50ppm-100ppm. COS: Dishes moved to main kitchen to be sanitized; PIC notified employees of dishmachine use restrictions.
