CA: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored on a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized. COS: The knife was removed.

Food stored covered — Inspector Note: Containers of cashews stored near the grill, curry powder stored above the prep unit, soup toppings stored inside the prep unit, vegetables and fried chicken wings stored inside the walk in cooler was not stored covered. CA: Food items must be stored in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. COS: The food items were covered.
