Observed 6 unlabeled spices on spice rack on countertop in main kitchen. CA: Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, shall be clearly and legibly identified, in English, with the common name of the food. COS: labels added to all items.
Adequate handwashing facilities supplied & accessible — Inspector Note: Observed towels stored in hand sink by ware washing area of main kitchen. CA: A handwashing facility may not be used for purposes other than handwashing. COS: towels were removed from the hand sink.
Proper date marking and disposition — Inspector Note: Observed two containers of eel date marked for 6.8 stored in the bottom of the prep top protein cooler in the main kitchen. CA: Food that requires datemarking shall be discarded if it exceeds 7 days, not including the time that the product is frozen. COS: Both containers were discarded.
Food separated and protected — Inspector Note: Observed raw shelled eggs stored behind shredded cheese in prep top cooler in main kitchen. Observed raw shelled eggs stored behind mixed veggies in reach in cooler in main kitchen. Observed cooked pork belly stored under raw beef in cooler in main kitchen. C/A: Food shall be protected from cross contamination by arranging each type of food in equipment so that cross contamination of one type with another is prevented. COS: Eggs placed in front of cheese in prep top cooler, eggs moved behind mixed vegetables in reach in cooler; cooked pork belly moved above raw beef in cooler.
Proper cold holding temperatures — Inspector Note: Observed whole milk and sweet cream holding above 41f in the cooler in the front food service. C/A: TCS foods shall be maintained at 41F or below when cold holding. COS: Items discarded.
