Proper cold holding temperatures — Inspector Note: Several TCS food items stored inside the prep unit held cold holding temperatures above 41F. The ambient air temperature of the thermometer stored inside the unit read 50F. CA TCS food items must maintain cold holding temperatures at 41F or below. COS TCS food items were discarded. The reach in cooler near the office will be used until the unit is repaired. The reach in cooler is maintaining cold holding temperatures at 39F.
