CA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

Item 6-1A Critical / Risk Factor Corrected On Site (COS)

Proper cold holding temperatures — Inspector Note: Observed multiple containers of potato salad cold holding above 41F in the display case in front food service area. CA: All TCS items shall be maintained at 41F or below when cold holding. COS: All containers of potato salad were discarded. EHS advised PIC to store TCS items in the middle or back ledge of the display case.

Proper hot holding temperatures — Inspector Note: Observed chicken soup and grilled chicken hot holding below 135F in crocks in the front food service area. CA: All TCS items shall be maintained at 135F or above when hot holding. COS: Both the chicken soup and grilled chicken had been hot holding for less than 2 hours. Both items were reheated to over 165F.
