No bare hand contact with ready-to-eat foods or approved alternate method properly followed — Inspector Note: Observed the following: Observed employee touching RTE pies with bare hands while putting them in packages. Observed employee allowing their bare hands to touch RTE sausage patties while transporting them to a different unit. C/A: food employees shall not contact exposed, ready-to-eat food with their bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment. COS: Employees put gloves on.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed pink slime accumulation on creamer dispenser at front service. Observed dark accumulations at soft drink nozzles in dining area. C/A: Equipment food-contact surfaces and utensils shall be clean to sight and touch. Correct within 72 hours.

Wiping cloths: properly used and stored — Inspector Note: Observed (x3) buckets of wiping cloths stored in a sanitizing solution of 0ppm chlorine in main kitchen. C/A: Wiping cloths shall be held between uses in a chemical sanitizer solution at a concentration (50ppm-100ppm for chlorine) or specified under DPH Rule 511-6-1-.05(6)(n). COS: Sanitizer replaced with 50ppm-100ppm of chlorine solution.
