Facility has produce (cauliflower) that required washing prior to human consumption (this product does not come in pre-washed per CFSM and packaging on product). C/A: raw fruits and vegetables shall be thoroughly washed in water, in a sink designated for that purpose only, to remove soil and other contaminants before being cut, combined with other ingredients, cooked, served, or offered for human consumption in ready-to-eat form. COS: chicken removed from sink and sink sanitized and allowed to air dry; discussed where raw chicken can be prepped
Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed the ambient temperature for the 3-door Reach-in freezer located by the main kitchen exit door at 55F. Ambient thermometer inside unit also observed at 55F. C/A: Ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed black build up on inside of 2 of the soda nozzles on the front food service drink machine. Observed black build up on the interior of the tea nozzle for the tea dispenser located in the front food service area. C/A:In equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment: (I) At a frequency specified by the manufacturer; or (II) Absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold. COS: nozzles removed, scrubbed and sanitized with a QUAT solution (at 200ppm) and allowed to air dry
