Food properly labeled; original container — Inspector Note: Observed several squeeze bottles with no label throughout out the main kitchen with various sauces stored inside. C/A: Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food.

Wiping cloths: properly used and stored — Inspector Note: Observed wiping cloths stored inside chlorine sanitizer measuring 0 ppm on the table in the front food service. C/A: Cloths in-use for wiping food spills from tableware and carry-out containers that occur as food is being served shall be maintained between 50-100 ppm chlorine sanitizer. COS: PIC re-made sanitizer measuring 50 ppm.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed black residue on the soda nozzles at the drink machine in the front food service. C/A: Equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: PIC replaced all nozzles with new clean nozzles
