Proper cooling methods used: adequate equipment for temperature control — Inspector Note: Observed improper cooling methods for items cooling in the walk-in cooler (lo mein stored completely covered by lid, chicken tightly wrapped in cling wrap (EHS observed condensation) and cooked chicken tightly covered in cling wrap). C/A: Cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using one or more of the following methods depending on the type of food being cooled: 2. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be: (i) Arranged in the equipment to provide maximum heat transfer through the container walls; and (ii) Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. COS: lid removed, and cling wrap removed to allow for heat transfer

Adequate handwashing facilities supplied & accessible — Inspector Note: Observed a sanitizer bucket being stored in the hand sink located in the front food service area. Observed several buckets of soy sauce blocking access to the hand sink located in the main kitchen area. C/A: A handwashing sink shall be maintained so that it is accessible at all times for employee use. Pf 2. A handwashing facility may not be used for purposes other than handwashing. Pf 3. An automatic handwashing facility shall be used in accordance with manufacturer’s instructions. Pf COS: sanitizer bucket removed, and soy sauce buckets moved. Discussed that hand sinks shall only be used for hand washing and accessible at all times

COS: EHS informed food employee hand washing shall only occur at designated hand sinks; food employee washed hands at hand sink in main kitchen.

COS: food covered with lids or plastic wrap

C/A: In equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment: (I) At a frequency specified by the manufacturer; or (II) Absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold. COS: ice machine turned off and ice discarded during inspection, ice machine cleaned to sight and touch
