Proper reheating procedures for hot holding — Inspector Note: Observed Gyro beef taken from the cooler at 11:16am and re-heater on the grill in the main kitchen. After the employee stated the food was re-heated EHS took the temperature and was found to be 145*F. The beef being kept in the hot holding unit. Gyro beef is not commercially processed so the final re-heating temperature should be 165 C/A Reheating for hot holding shall be done rapidly and the time the food is between the temperatures of 41°F (5°C) and 165°F (74°C) and 41°F (5°C) and 135°F (57°C) for commercially processed food, may not exceed 2 hours. P COS: Beef was re-heated again and the temperature was tested at 167*F
