Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed soda machine nozzles with black debris present. CA: Advised PIC Equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: PIC removed the nozzle and soaked them during time of inspection

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed the high temp dish machine in-use unable to reach a minimum of 160*F. CA: Advised PIC 1. Except as specified in paragraph 2 of this subsection, in a mechanical operation, the temperature of the fresh hot water sanitizing rinse as it enters the manifold may not be more than 194ºF (90ºC), or less than: Pf (i) For a stationary rack, single temperature machine, 165ºF (74ºC); Pf or (ii) For all other machines, 180ºF (82ºC). Pf 2. The maximum temperatures specified under paragraph 1 of this subsection, do not apply to the high pressure and temperature systems with wand-type, hand-held, spraying devices used for the in-place cleaning and sanitizing of equipment such as meat saws. PIC has been advised to discontinue using the dish machine until repairs are made and wash, rinse and sanitize at the 3-compartment sink

Toxic substances properly identified, stored, used — Inspector Note: Observed 2 sanitizer buckets measuring 200+PPM of chlorine. CA: Advised PIC . Chemical sanitizers, including chemical sanitizing solutions generated on-site, and other chemical antimicrobials applied to food-contact surfaces shall: 1. Meet requirements specified in 40 CFR 180.940 Tolerance exemptions for active and inert ingredients for use in antimicrobial formulations (Food-contact surface sanitizing solutions) P, or 2. Meet the requirements as specified in 40 CFR 180.2020 Pesticide Chemicals Not Requiring a Tolerance or Exemption from Tolerance-Non-food determinations. COS: PIC remade the solutions during time of inspection to 100PPM
