Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed the stand alone prep top cooler across from the fryer in need of resurfacing or replacing, heavily stained cutting board. CA: Advised PIC Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they cannot be resurfaced.
Nonfood-contact surfaces clean — Inspector Note: Observed 2 heavily rusted racks inside walk-in cooler #1 and 1 rusted rack inside walk-in cooler #2. CA: Advised PIC Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

CA: Advised PIC Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. COS: Food employee cleaned during time of inspection

Physical facilities installed, maintained, and clean — Inspector Note: Observed heavy debris accumulation underneath cooking equipment, racks and shelves in the main kitchen. CA: Advised PIC all physical facilities shall be maintained in good repair.
