2 recorded inspectionsFood properly labeled; original container — Inspector Note: Observed 10 boxes of chef salad were at the display cooler of the coffee shop expired on 07/12/2026. CA: Discussed with the person in charge that prepackaged sandwiches, eggs, infant formula, shucked oysters, milk, and time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date. COS: Person in charge moved all the foods from the cooler and discarded.
Proper cold holding temperatures — Inspector Note: Observed time/temperature control safety food such as egg salad, milk, yogurt, sliced tomatoes were above cold holding temperature of 41F.Please see the temperature log for out of temp food, marked with asterisks. CA: Discussed with the person in charge that time/temperature control for safety food shall be maintained at 41°F (5°C) or below for cold holding. COS: Person in charge put the egg salad in the ice bath for and moved the dairy product and tomatoes to the walk-in cooler for rapid cooling.
Time as a public health control: procedures and records — Inspector Note: Observed there was no proper documentation of Time as Public health control for the milk, half& half and 2% milk served for the coffee shop, and also for the salad bar at the front service. CA: Discussed with the person in charge that if time without temperature control is used as the public health control for ready-to-eat time/temperature control for safety food that is displayed or held for sale or service, written procedures shall be prepared in advance, maintained in the food service establishment, and made available to the regulatory authority upon request that specify, and also he food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control.
