2 recorded inspectionsFood and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed metal chipping on the interior surface of the walk-in cooler door. CA: Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. Discussed with PIC to fix the walk in cooler door as soon as possible.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed black debris on the inner plastic part of the ice machine; Additionally, observed black debris on the soda machine nozzle. CA: Surfaces of utensils and equipment contacting food that is not time/temperature control for safety food shall be cleaned at a frequency necessary to preclude accumulation of soil or mold. Discussed with PIC to clean and sanitize the ice machine and soda nozzles more frequently to prevent debris accumulation. PIC voluntarily removed the nozzles to be washed and sanitized. The ice machine will be cleaned today after facility closes.
Proper date marking and disposition — Inspector Note: Observed TCS food items that expired in 7/27/26(Prep date for all items 7/21/26). The TCS food items were two containers of sliced tomatoes, one container of pico de gallo, and three containers of cream cheese. CA: A food that requires datemarking shall be discarded if it exceeds 7 days, not including the time that the product is frozen. COS: PIC discarded the TCS food items.
Washing fruits and vegetables — Inspector Note: Observed an employee prepare a sanitizer bucket using a sink that is dedicated for vegetable washing only. CA: Only raw fruits and vegetables that are intended for washing by the consumer before consumption, raw fruits and vegetables shall be thoroughly washed in water, in a sink designated for that purpose only. COS: Discussed with PIC that veggie sink can only be used for vegetable washing only. PIC voluntarily sanitized the veggie sink and educated the employee to use the three compartment sink for sanitizer bucket prep.
Posted: Permit/Inspection/Choking Poster/Handwashing — Inspector Note: Observed a sink in the kitchen with no handwashing signage. CA:A sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees and shall be clearly visible to food employees. COS: EHS provided a laminated handwashing sign.
Warewashing facilities: installed, maintained, used; test strips — Inspector Note: Observed no test strips available to test the QUAT sanitizer buckets or chlorine dishwasher. CA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. PIC will order the test strips as soon as possible. In meanwhile, EHS provided chlorine and QUAT test strips to last for a few days.
