(See temperature log for details) CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: All TCS foods were moved into the second WIC to cool down.

CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C). Discussed with PIC that the walk in cooler that is not holding the correct temperatures must not be used to store any TCS foods until it is repaired.
