Time as a public health control: procedures and records — Inspector Note: Observed inconsistent discard time records for cooked pizzas stored in the pizza tower. Although a time log sheet is available, it is kept away from the pizza tower, and there is no clear identification indicating which recorded discard time corresponds to each pizza. As a result, employees cannot reliably verify the correct discard time for individual pizzas. CA: The food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control; Discussed with PIC to develop a sticker marking system to for each pizza stored in pizza tower that indicated the 4 hour discard time.
