Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed cardboard being used to line shelf in main kitchen. Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.
Nonfood-contact surfaces clean — Inspector Note: Observed equipment such as ranges, grill, and shelves not clean to sight and touch. CA. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
Toilet facilities: properly constructed, supplied, cleaned — Inspector Note: Observed no tissue in guest bathroom in lobby. A supply of toilet tissue shall be available at each toilet. COS tissue was provided.
Physical facilities installed, maintained, and clean — Inspector Note: Observed missing/ damaged ceiling tiles and vents with dust build up in dining area. Observed missing vent cover in ceiling in main kitchen. Observed build up of grease on wall and floor behind cooking equipment in main kitchen. Observed hole in wall beneath hand wash sink in outer prep area. Discussed with PIC that all physical facilities shall be maintained in good repair and the physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
Adequate handwashing facilities supplied & accessible — Inspector Note: Observed no paper towel in guest bathroom. Each handwashing sink or group of adjacent handwashing sinks shall be provided with: 1. Individual, disposable towels; 2. A continuous towel system that supplies the user with a clean towel; 3. A heated-air hand drying device
Proper cooling methods used: adequate equipment for temperature control — Inspector Note: Observed yellow peas being cooled in overfilled pans, tightly covered and stacked on together. PIC advised to separate food in smaller portions and leave uncovered or partially covered. CA. Cooling shall be accomplished in accordance with the time and temperature by using one or more of the following methods depending on the type of food being cooled: (i) Placing the food in shallow pans; (ii) Separating the food into smaller or thinner portions; (iii) Using rapid cooling equipment; (iv) Stirring the food in a container placed in an ice water bath; (v) Using containers that facilitate heat transfer; (vi) Adding ice as an ingredient; or (vii) Other effective methods.
