2 recorded inspectionsContamination prevented during food preparation, storage, display — Inspector Note: Observed a pack of water being stored on the floor in the Walk-In Cooler. CA: Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least 6 inches (15 cm) above the floor. COS: PIC removed items from the floor and placed them on a shelf in the Walk-In Cooler.
Physical facilities installed, maintained, and clean — Inspector Note: Observed food debris and splatter on the walls in the main kitchen. Floor along walls and beneath equipment is unclean. Observed ceilings with grease buildup and debris. CA: All physical facilities shall be maintained in good repair. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. Except for cleaning that is necessary due to a spill or other accident, cleaning shall be done during periods when the least amount of food is exposed, such as after closing. Advised PIC to deep clean kitchen area.
Adequate ventilation and lighting; designated areas used — Inspector Note: Observed a cup and speaker sitting on the prep top cooler's surface. Advised PIC to have a designated area for employees' drinks and personal items. CA: Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. COS: PIC moved items from the prep top cooler surface to designated storage area.
Contamination prevented during food preparation, storage, display — Inspector Note: CA: Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least 6 inches (15 cm) above the floor. Observed two six packs of club soda and a pack of water being stored on the floor in the Walk-In Cooler. COS: PIC removed items from the floor and placed them on a shelf in the Walk-In Cooler.
In-use utensils: properly stored — Inspector Note: CA: In food preparation or dispensing, food preparation and dispensing utensils shall be stored in the food with their handles above the top of the food and the container and in food that is not time/temperature control for safety food with their handles above the top of the food within containers or equipment that can be closed, such as bins of sugar, flour, or cinnamon. Observed a cup with no handle stored in a food container of marinara sauce in the prep top cooler. Observed a cup with no handle stored in each food container of salt and sugar in the dry storage area. COS: PIC discarded each cup with no handle in each food container of marinara, salt, and sugar.
Food-contact surfaces: cleaned & sanitized — Inspector Note: CA: A quaternary ammonium compound solution shall have a minimum concentration between 200 ppm and 400 ppm or according to the manufacturers instructions. Observed both 3-comp sinks in the kitchen and at the bar with a concentration reading of 400+ ppm. Observed sanitizing buckets with a concentration reading above 400+ ppm. COS: Food employee drained the solution in the 3-comp sinks halfway and poured out the solution in sanitizing buckets halfway and added more fresh water.
Proper date marking and disposition — Inspector Note: CA: A food that requires datemarking shall be discarded if it exceeds 7 days, not including the time that the product is frozen. Upon arrival, observed food employee discarding food containers with labels exceeding 7 days from date it was marked from the pizza prep top cooler. Observed several food containers of pork, cheese, and vegetables that were appropriately marked with a date or day that exceeds 7 days in the pizza prep top cooler. COS: All items were discarded from the pizza prep top cooler by food employee. Advised to go through daily and add discard date to ensure they are properly being discarded.
