CA: Food shall be protected from contamination by storing the food in a clean, dry location; where it is not exposed to splash, dust, or other contamination; and at least 6 inches (15 cm) above the floor.
Contamination prevented during food preparation, storage, display — Inspector Note: Observed multiple packages of beer and water stacked on top of each other on the floor in the walk-in cooler. CA: Food shall be protected from contamination by storing the food in a clean, dry location; where it is not exposed to splash, dust, or other contamination; and at least 6 inches (15 cm) above the floor.
Utensils, equipment and linens: properly stored, dried, handled — Inspector Note: Observed dish stacked while wet on the drying rack in the main kitchen. CA: After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food; and may not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.
Food stored covered — Inspector Note: CA: Food shall be stored in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled, to be protected from overhead contamination. Observed food containers of raw chicken in the prep top cooler and food containers of raw beef in the walk-in cooler without any coverings or lids. COS: Food employee provided a metal covering for each food container in the prep top cooler and walk-in cooler.
