Personal cleanliness — Inspector Note: Observed two food handling employees wearing watches and/or bracelets. COS items were removed and employees washed hands. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food.

Proper cold holding temperatures — Inspector Note: Observed TCS foods not cold holding at 41°F (5°C) or below. Chef base cooler (raw chicken, raw pork chop, raw steaks) Prep top cooler (garlic butter, sliced green tomatoes) COS all food items were moved to walk in freezer to cool. The gasket on the chef base cooler appear to be in disrepair. Ambient temperature was recorded at 40°F, however the drawer wasn't flush upon initial observation.
