Food properly labeled; original container — Inspector Note: Observed several dry bulk items (flour, sugar) not labeled that were out of their original container. Informed PIC to label all food items out of their original container. Containers were labeled.

Item 15B Good Retail Practice

Warewashing facilities: installed, maintained, used; test strips — Inspector Note: Automatic dishwasher was observed dispensing chlorine sanitizer at 10 ppm. Chlorine should be dispensed at 50 ppm- 100 ppm. Until dishwasher is repaired, all dishes must be washed in the 3 compartment sink.

Physical facilities installed, maintained, and clean — Inspector Note: Observed storage room with floors that contained debris, food particles, and dead roach parts. The areas needs to be cleaned better.

Response procedures for vomiting & diarrheal events — Inspector Note: Pic failed to provide clean up procedures for vomit and diarrhea events. EPA approved sanititizer not used. Observed non approved sanitizer bleach. Advised PIC that he must use epa approved sanitizer. Provided pic with chlorine bleach procedures.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed non epa approved sanitizer being used to clean food contact surfaces. Advised pic to only use epa approved sanitizer.

Proper cold holding temperatures — Inspector Note: Observed several food items not being held at 41 degrees and below. TCS food items include cantaloupe, honey dew melon, tomato salsa, and chopped lettuce. Food items were discarded.

Proper hot holding temperatures — Inspector Note: Observed TCS foods not holding at 135F or more. TCS food items include pepper chicken, crawfish, cabbage, salmon, shrimp, sweet and sour chicken. Advised to remove double pans (several) from the steam wells.
