CA: Discussed with the person in charge that in use utensils should be stored in a container of water if the water is maintained at a temperature of at least 135°F (57°C) and the container is cleaned at a frequency of 4 hours.

Proper cooling methods used: adequate equipment for temperature control — Inspector Note: Observed bin of lettuce tightly sealed inside walk in cooler. PIC stated lettuce was prepped two hours prior, temperature was observed at 63 degrees Fahrenheit. COS operator separated lettuce into two smaller bins and added ice to rapidly cool lettuce.
