Item 12C Good Retail Practice

Wiping cloths: properly used and stored — Inspector Note: Observed two wet wiping cloth stored on the counter outside sanitizer buckets. Wiping Cloths, Use Limitation (C) (m) Wiping Cloths, Use Limitation. 1. Cloths in-use for wiping food spills from tableware and carry-out containers that occur as food is being served shall be: (i) Maintained dry; and (ii) Used for no other purpose. 2. Cloths in-use for wiping counters and other equipment surfaces shall be: (i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and PIC placed wet cloths inside sanitizer buckets with proper sanitizer.

Multiuse Food-Contact Surfaces (Pf) (c) Multiuse Food-Contact Surfaces. 1. Multiuse food-contact surfaces shall be: (i) Smooth; Pf (ii) Free of breaks, open seams, cracks, chips, inclusions, pits, and similar imperfections; Pf PIC voluntarily discarded cracked knife.

Toilet Room Receptacle, Covered (C) (h) Toilet Room Receptacle, Covered. A toilet room used by females shall be provided with a covered receptacle for sanitary napkins. Discussed with PIC to obtain covered trash can lid for women's restroom.

Insects, rodents, and animals not present — Inspector Note: Observed two live roaches crawling on counter of bar area upon start of inspection. Also observed more than 10 live roaches on floors and walls of main kitchen. Controlling Pests (Pf, C) (k) Controlling Pests. The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by: 1. Routinely inspecting incoming shipments of food and supplies; 2. Routinely inspecting the premises for evidence of pests; 3. Using methods, if pests are found, such as trapping devices or other means of pest control as specified under subsections (6)(e), (6)(m), and (6)(n) of this Rule; Pf and 4. Eliminating harborage conditions. Discussed with PIC to contact pest control.

Adequate handwashing facilities supplied & accessible — Inspector Note: Observed no hand soap at the hand sink in the bar area. Handwashing Cleanser, Availability (Pf) (3) Numbers and Capacities. (a) Handwashing Cleanser, Availability. Each handwashing sink or group of two adjacent handwashing sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap. Pf PIC added handsoap to hand sinks.

A heated-air hand drying device; Pf or 4. Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed black organic substance on the inside roof of the ice machine. Equipment, Food-Contact Surfaces,& Utensils (Pf) (7) Cleaning of Equipment and Utensils. (a) Equipment, Food-Contact Surfaces, and Utensils. 1. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf. Discussed with PIC to refrain from using ice stored in the ice machine, discard all existing ice, and thoroughly clean and sanitize the ice machine before using again. PIC instructed a food service employee to clean the ice machine.
