Item 12A Good Retail Practice Corrected On Site (COS)

Contamination prevented during food preparation, storage, display — Inspector Note: Observed the condenser pipe leaking water onto a rack with boxes of unopened cookies, raw chicken and catering prep. CA: Advised PIC Food shall be protected from contamination that may result from a factor or source not specified under paragraphs (a) through (y) of this subsection. COS: PIC relocated all food items and a follow-up will be conducted in regards to the leak, PIC has been advised to provide a follow-up via email (please see comment section for details)

Utensils, equipment and linens: properly stored, dried, handled — Inspector Note: Observed several dishes stacked while wet stored on top of the 3-compartment sink and under the prep table. CA: Advised PIC dishes shall be stacked In a self-draining position that allows air drying

Plumbing installed; proper backflow devices — Inspector Note: Observed a leak coming from a pipe connected to the condenser inside of the walk-in cooler with a constant drip causing the walk-in cooler floor to be wet. CA: Advised PIC A plumbing system shall be repaired according to law; P and maintained in good repair.

Physical facilities installed, maintained, and clean — Inspector Note: Observed cracked tiles holding food and water on the front service line. CA: Advised PIC 1. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. 2. Except for cleaning that is necessary due to a spill or other accident, cleaning shall be done during periods when the least amount of food is exposed, such as after closing.
