Suggested to purchase chlorine test strips. CA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed in-use spatula fall on floor and employee working at grill rinse spatula off then attempted to use spatula at grill. Informed employee that any contaminated or unclean utensils and dishes shall be washed, rinsed, and sanitized in that order at the 3-compartment sink. COS: PIC washed, rinsed, and sanitized spatula at 3-compartment sink. CA: Utensils and food-contact surfaces of equipment shall be sanitized before use after cleaning.
